Homemade Birthday Cupcakes

Delicious fun for the whole family

When asking my kid what she wanted for her birthday, she thought for a second then simply replied "I want you to make cupcakes at home in the kitchen". I was surprised she didn't want a pony, a party, or something crazy that kids typically ask for. I put my thinking cap on and went to work. I'd watched enough cooking shows during pregnancy to pull this off :-) 

I was stressed out throughout the process, considering this was my first homemade cupcake task, but in the end the cupcakes turned out to be delicious. Of course kids always like what their parents give them when it's sweet, but my mom who's a culinary wiz told me my cupcakes were good too. That meant a lot!!! So since I have my whole family's approval, I'm sharing my delicious recipe. I had to test out my baking skills for myself before sharing with the kids, that's why one's missing.

Ingredients

Mix the dry ingredients in a bowl; flour, sugar, baking powder, salt.

Mix the eggs and butter and a separate bowl. Mix in the dry ingredients with the wet ingredients; vanilla, milk.

Blend all ingredients for 2 minutes; until thick and smooth.

Pour cupcake mix into a 12 cupcake pan, place in the oven on 350F and bake for 16 minutes (or until golden brown on top).

Let cupcakes cool before adding frosting. We used "pink can spray frosting" which included 4 different frosting design tips. The green frosting was from a squeeze bottle of frosting.
