There is always a big rave about "Taco Tuesday"! There are memes on social media, there are Taco Tuesday t-shirts, and even Taco Tuesday deals at restaurants!!! I just so happened to find a nightgown for my daughter with a fun "Taco Tuesday" graphic. When I presented it to her she immediately asked to have tacos on Tuesday. That's when I had to put my thinking cap on...I get off too late for us to go out to dinner as a family....the tacos would be cold if I brought them home because we live so far....I guess I have to find a good recipe and make them at home....So that's exactly what I did ;-)
MY TACO TUESDAY RECIPE
Ingredients
- 5 lbs shrimp
- 1 lbs Shredded cheese
- 1 lbs Lettuce
- 25 Corn Tortillas
- Baja Sauce (6-8 servings)
- 1/2 cup Real Mayo
- 1/2 cup Sour Cream or Plain Yogurt
- 1 Jalapeno (take the seeds out so it won't be to spicy for the kids)
- 2 tbsp Onions
- 1/4 Red Bell Pepper
- 1/2 Avocado
- 1 tbsp Vinegar
- 1/4 tsp Garlic
- 1/4 tsp Cumin
- 1/4 tsp Pepper
Instructions
1. Blend ingredients for the baja sauce until creamy. (If to spicy, add lemon juice)
2. Grill or Saute shrimp in butter & lemon juice.
3. Warm corn tortillas in a non-stick skillet.
4. Place shrimp in corn tortillas, add spoonful of baja sauce, add handful of cheese & a handful of lettuce.
5. Eat your delicious tacos! Use leftover baja sauce as dip for chips!!
